I'd highly recommend using Moinmoin ( http://moinmoin.wikiwikiweb.de/ )
You might have implementations of it at

I have set up one for work and have the idea mind to use it for other
It's very simple to setup that make it possible to have a "wiki farm".
It uses plain files as the backend database for storing all your content.
I'd be happy to help out, starting in April
(I have March allready completely planned).
Have also a look the Desktop Edition of moinmoin, which is the complete
wiki including a server that listens at localhost, port 8080.
